Vegetarian Jambalaya.

 So I cooked some vegetarian Jambalaya for Nicola tonight, and she requested that I post the recipe all up on this blog.  My mom taught me how to do this shit, just so you know.  Also, I will note that we made it as super cheaply as we could, because we are broke as fuck.  There are easy ways to spice it up further, if you wanna throw some extra stuff in.  Tomatoes, spices, etc.

WHAT DO YOU NEED?
  1. Two green peppers (or a green and a red if you are so inclined, financially and aesthetically)
  2. One red skinned onion.
  3. Two stalks of celery.
  4. Your choice of protein (we used Morningstar Chik'n Grillers, but sausage, chicken, or your choice of vegetarian substitute will work)
  5. One and a half cups of rice.  We used brown rice.
  6. Spices:  garlic, crushed red pepper, and Tabasco sauce.
First thing's first.  Cook up your Chik'n on a frying pan.  You don't need to get it super well done, because it's going to go into some hot hot water for a while later.  Then chop it all to hell and set it aside.


 Then chop up all those vegetables and sautee them with vegetable or olive oil.  Let 'em cook for a little while, so they get soft.  Season with garlic, red pepper, and Tabasco to your liking.  I choose to use a shit load of red pepper and Tabasco.
 



After you have cooked those veggies up for a while, put them in a big pot with three cups of water in it.  Throw that Chik'n in there, too.


Now get yourself a cup and a half of rice, and throw that junk in the pot.  Bring it to a boil, stir it up, and put a lid on it.  Reduce the heat to a simmer and let it cook for thirty five minutes (twenty if you're using white rice.)


 HEY.  You know what goes nicely with Jambalaya?  Corn bread.  We made a box of that stuff, too.  The directions are easy, and totally printed on the box.  You need a little bit of milk and egg, just so you know.


Hey, look, our food's done!  Take the bread out of the oven, cut it up, and put some butter on it.


And spoon yourself out some Jambalaya.  


Success!  Our dinner was delicious.
